2 tbsp olive oil
1 lb boneless, skinless chicken breast, diced
1 small onion, finely chopped
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
1 tbsp cornstarch (optional, for thickening)
1 tsp dried thyme
1 tsp Italian seasoning
Salt and pepper, to taste
1 (16 oz) package potato gnocchi
2 cups fresh spinach, roughly chopped
Instructions
Heat olive oil in a large pot over medium heat. Add diced chicken and cook until lightly browned. Remove and set aside.
In the same pot, sauté onions, carrots, and celery until softened. Add garlic and cook for another minute.
Pour in chicken broth and stir in heavy cream. Add thyme, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
If you prefer a thicker soup, dissolve cornstarch in 2 tbsp water and stir into the broth. Cook for 2 minutes.
Add gnocchi and cooked chicken. Simmer for 5-7 minutes until gnocchi is tender.
Stir in spinach and cook until wilted. Adjust seasoning as needed.
Serve warm and enjoy!

Substitute heavy cream with half-and-half for a lighter version.
