Andy’s Homemade Mexican Rice is a delicious and easy-to-make side dish packed with bold flavors. Made with long-grain rice, tomatoes, onions, and spices, this traditional Mexican rice pairs perfectly with tacos, burritos, or grilled meats.

Ingredients

  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium tomato, diced
  • 2 tbsp tomato paste
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

 

  • 1/4 cup fresh cilantro, chopped (optional)

Instructions

  1. Heat the oil in a pan over medium heat. Add the rice and sauté until golden brown.
  2. Add the chopped onion and garlic, cooking until fragrant.
  3. Stir in the diced tomato, tomato paste, cumin, chili powder, salt, and pepper.
  4. Pour in the chicken broth, stir, and bring to a boil.
  5. Reduce heat to low, cover, and simmer for 18-20 minutes, or until the liquid is absorbed.
  6. Remove from heat and let sit for 5 minutes. Fluff with a fork and garnish with fresh cilantro if desired.

Notes

  • For extra flavor, use fire-roasted tomatoes.
  • Substitute vegetable broth for a vegetarian version.
  • Add peas, carrots, or corn for a heartier dish.
