Ingredients

Scale
  • lbs boneless, skinless chicken breasts (cubed)

  • 1½ cups fresh pineapple chunks

  • 1 red bell pepper, cut into 1-inch pieces

  • 1 green bell pepper, cut into 1-inch pieces

  • ½ red onion, cut into chunks

  • 1 cup BBQ sauce (your favorite variety)

  • 2 tbsp olive oil

  • Salt and pepper to taste

  • Wooden or metal skewers

Instructions

  1. Marinate chicken in half the BBQ sauce, olive oil, salt, and pepper. Chill for 30 minutes.

  2. Preheat grill to medium-high heat. If using wooden skewers, soak in water for 30 minutes.

  3. Assemble kabobs by threading chicken, pineapple, and vegetables onto skewers alternately.

  4. Grill for 10–12 minutes, turning occasionally, until chicken is fully cooked.

  5. Brush with remaining BBQ sauce during the final minutes for extra flavor.

  6. Serve hot, garnished with fresh herbs or extra sauce if desired.

Notes

  • Use metal skewers for easier grilling.

  • Swap pineapple with mango for a tropical twist.

  • Great with rice, salad, or wrapped in flatbread.
