  • 1 small onion, chopped
  • 1 packet taco seasoning
  • 1 can enchilada sauce (10 oz)
  • 1 can black beans, drained and rinsed
  • 1 can corn (optional)
  • 8 small tortillas
  • 2 cups shredded cheddar cheese
  • Fresh cilantro (for garnish)

Instructions

  • Preheat the oven to 375°F (190°C).
  • Cook ground beef with onions in a skillet until browned. Drain any excess fat.
  • Add taco seasoning and a little water to the beef mixture, cooking as directed.
  • Stir in enchilada sauce, black beans, and corn.
  • In a baking dish, layer tortillas, beef mixture, and cheese. Repeat until all ingredients are used, ending with a cheese layer on top.
  • Bake for 20 minutes or until the cheese is melted and bubbly.
