This beef enchiladas recipe is a flavorful Mexican dish made with seasoned ground beef, tortillas, enchilada sauce, and cheese. Perfect for a hearty dinner, these enchiladas are easy to prepare and sure to please the whole family.

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 (15 oz) can red enchilada sauce
  • 8 small flour or corn tortillas
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • Optional toppings: sour cream, chopped cilantro, sliced jalapeños

Instructions

  • Preheat oven to 375°F (190°C).
  • In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
  • Add onion and garlic to the skillet, cooking until softened. Stir in chili powder, cumin, paprika, salt, and pepper.
  • Spread 1/2 cup of enchilada sauce in the bottom of a 9x13-inch baking dish.
  • Warm tortillas slightly to make them pliable. Add a portion of the beef mixture and a sprinkle of cheese to each tortilla, roll tightly, and place seam-side down in the dish.
  • Pour remaining enchilada sauce over the rolled tortillas and sprinkle with remaining cheese.
  • Bake for 20 minutes, or until cheese is melted and bubbly.
  • Serve warm with optional toppings.

Notes

  • You can substitute ground turkey or shredded chicken for ground beef.
  • Add black beans or corn to the filling for extra texture.
  • Adjust the spice level by using mild or hot enchilada sauce.
