2 cups all-purpose flour
1/4 cup granulated sugar
2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
2 large eggs
1/2 cup milk
1 tsp vanilla extract
2 tbsp melted butter
2 cups diced apples (Granny Smith or Honeycrisp)
Oil for frying
For the Glaze:
1 cup powdered sugar
2 tbsp milk
1/2 tsp vanilla extract
Instructions
In a large bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg.
In another bowl, beat eggs, then add milk, vanilla, and melted butter. Mix well.
Fold wet ingredients into dry ingredients until combined. Gently stir in diced apples.
Heat oil to 350°F (175°C) in a deep pan.
Drop spoonfuls of batter into the hot oil, frying for 2-3 minutes per side until golden brown.
Remove fritters and drain on paper towels.
In a small bowl, whisk together powdered sugar, milk, and vanilla to make the glaze.
Drizzle glaze over warm fritters and serve.
