  • 1 lb (450g) boneless, skinless chicken breast, sliced
  • 1 cup mushrooms, sliced
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp black pepper, freshly ground
  • ½ tsp salt (adjust to taste)
  • ½ tsp sugar
  • 1 tbsp cornstarch (mixed with 2 tbsp water)
  • 2 tbsp vegetable oil
  • ¼ cup chicken broth
  • 1 green onion, chopped (for garnish)

Instructions

  • Heat 1 tbsp oil in a pan over medium-high heat. Add chicken slices and cook until golden brown. Remove and set aside.
  • In the same pan, add the remaining oil and sauté onions, garlic, and mushrooms until fragrant and tender.
  • Return the chicken to the pan and add soy sauce, oyster sauce, black pepper, salt, and sugar. Stir well.
  • Pour in chicken broth and let it simmer for 2-3 minutes.
  • Add the cornstarch slurry, stirring continuously until the sauce thickens.
  • Remove from heat and garnish with chopped green onions. Serve hot over rice or noodles.
