This Broccoli Chicken Casserole is a comforting and satisfying meal made with juicy chicken, fresh broccoli, and a rich, cheesy sauce baked to perfection. Packed with protein and healthy vegetables, it’s a perfect weeknight dinner option for the whole family.

Ingredients

  • 2 cups cooked chicken, shredded or cubed
  • 4 cups broccoli florets, steamed
  • 1 cup shredded cheddar cheese
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup milk
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1/2 cup crushed Ritz crackers (optional for topping)
  • 2 tablespoons melted butter (optional for topping)

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large mixing bowl, combine the shredded chicken, steamed broccoli, cheddar cheese, cream of chicken soup, sour cream, milk, garlic powder, salt, and pepper. Mix well.
  • Transfer the mixture to a greased 9x13-inch baking dish and spread it evenly.
  • If desired, mix crushed Ritz crackers with melted butter and sprinkle over the top of the casserole.
  • Bake in the preheated oven for 25-30 minutes or until the casserole is bubbly and the topping is golden brown.
  • Remove from oven and let rest for 5 minutes before serving. Enjoy!

Notes

  • You can substitute cream of mushroom soup for cream of chicken if preferred.
  • Add cooked rice or quinoa to make this a more filling dish.
  • For a low-carb option, skip the cracker topping.
