  • 32 oz cream cheese, softened
  • 1 1/4 cups granulated sugar

  • 4 large eggs
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  3. Beat the cream cheese and sugar until smooth, then add vanilla.
  4. Add eggs one at a time, mixing slowly.
  5. Stir in sour cream until fully blended.
  6. Pour the cheesecake batter over the crust.
  7. Wrap the bottom of the pan in foil and place in a large roasting pan.
  8. Fill the roasting pan with hot water until it reaches halfway up the springform pan.
  9. Bake for 60-70 minutes, or until the center is almost set.
  10. Turn off the oven and crack the door slightly. Let the cheesecake cool for 1 hour.
  11. Remove from the water bath, refrigerate for at least 4 hours before serving.
