  • 2 cups cooked chicken, shredded or diced
  • 2 cups cooked white rice
  • 1 cup chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 ½ cups shredded cheddar cheese
  • ½ cup sour cream
  • 1 cup frozen peas and carrots (optional)
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper, to taste
  • 2 tbsp butter, melted (for topping)
  • ½ cup breadcrumbs (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. In a large bowl, mix the cooked chicken, cooked rice, cream of chicken soup, chicken broth, sour cream, garlic powder, onion powder, peas and carrots, and 1 cup of shredded cheddar cheese. Season with salt and pepper to taste.
  3. Pour the mixture into the prepared baking dish and spread evenly.
  4. Sprinkle the remaining ½ cup of cheddar cheese on top.
  5. In a small bowl, mix the breadcrumbs and melted butter. Sprinkle evenly over the casserole.
  6. Bake for 25-30 minutes or until bubbly and golden on top.
  7. Let cool for 5 minutes before serving. Enjoy!
