  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 8 large flour tortillas
  • 2 tbsp olive oil
  • Optional toppings: sour cream, guacamole, salsa

Instructions

  • Heat a skillet over medium-high heat and cook the ground beef until browned. Drain any excess fat.
  • Add taco seasoning and ¼ cup water to the beef. Simmer for 5 minutes, stirring occasionally.
  • Heat a clean skillet over medium heat. Place a tortilla in the pan and sprinkle with a layer of cheese, followed by a layer of beef, and then more cheese.
  • Top with another tortilla and cook for 2–3 minutes, pressing gently with a spatula, until the bottom tortilla is golden and crispy.
  • Flip the quesadilla and cook for another 2–3 minutes until the other side is golden and cheese is melted.
  • Repeat with the remaining tortillas, beef, and cheese.
  • Slice into wedges and serve with your favorite toppings.
