1 lb ground beef
1 packet taco seasoning
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
8 large flour tortillas
2 tbsp olive oil
Optional toppings: sour cream, guacamole, salsa
Instructions
Heat a skillet over medium-high heat and cook the ground beef until browned. Drain any excess fat.
Add taco seasoning and ¼ cup water to the beef. Simmer for 5 minutes, stirring occasionally.
Heat a clean skillet over medium heat. Place a tortilla in the pan and sprinkle with a layer of cheese, followed by a layer of beef, and then more cheese.
Top with another tortilla and cook for 2–3 minutes, pressing gently with a spatula, until the bottom tortilla is golden and crispy.
Flip the quesadilla and cook for another 2–3 minutes until the other side is golden and cheese is melted.
Repeat with the remaining tortillas, beef, and cheese.
Slice into wedges and serve with your favorite toppings.
