  • 2 boneless, skinless chicken breasts
  • 1 avocado, sliced
  • 4 slices of cheddar or mozzarella cheese
  • 4 slices of sandwich bread (or your preferred bread)
  • 2 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • Optional: Lettuce, tomato slices, or red onion

Instructions

  • Season chicken breasts with garlic powder, paprika, salt, and pepper.
  • Heat olive oil in a skillet over medium heat and cook chicken breasts for 4–5 minutes on each side, or until fully cooked. Let them rest before slicing.
  • In a small bowl, mix mayonnaise and Dijon mustard. Spread the mixture evenly on one side of each bread slice.
  • Layer sliced chicken, avocado, and cheese on two slices of bread. Add optional lettuce, tomato, or red onion if desired.
  • Top with the remaining bread slices, spread a little olive oil or butter on the outside of each sandwich, and grill in a skillet or sandwich press until golden brown and the cheese is melted.
  • Slice and serve warm.

Notes

  • Use whole-grain bread for a healthier option.
  • To save time, you can use pre-cooked chicken or rotisserie chicken.
