2 boneless, skinless chicken breasts
1 avocado, sliced
4 slices of cheddar or mozzarella cheese
4 slices of sandwich bread (or your preferred bread)
2 tbsp mayonnaise
1 tbsp Dijon mustard
1 tbsp olive oil
1 tsp garlic powder
1/2 tsp paprika
Salt and black pepper to taste
Optional: Lettuce, tomato slices, or red onion
Instructions
Season chicken breasts with garlic powder, paprika, salt, and pepper.
Heat olive oil in a skillet over medium heat and cook chicken breasts for 4–5 minutes on each side, or until fully cooked. Let them rest before slicing.
In a small bowl, mix mayonnaise and Dijon mustard. Spread the mixture evenly on one side of each bread slice.
Layer sliced chicken, avocado, and cheese on two slices of bread. Add optional lettuce, tomato, or red onion if desired.
Top with the remaining bread slices, spread a little olive oil or butter on the outside of each sandwich, and grill in a skillet or sandwich press until golden brown and the cheese is melted.
Slice and serve warm.
Notes
Use whole-grain bread for a healthier option.
To save time, you can use pre-cooked chicken or rotisserie chicken.
