  • 1 1/2 lbs boneless, skinless chicken breasts, sliced into thin strips
  • 3 bell peppers (any color), sliced
  • 1 large onion, sliced
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • Juice of 2 limes
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • Tortillas, for serving
  • Fresh cilantro, for garnish
  • Optional toppings: sour cream, guacamole, shredded cheese

Instructions

  • In a large mixing bowl, combine olive oil, lime juice, minced garlic, chili powder, cumin, paprika, onion powder, salt, and pepper. Add chicken strips and toss to coat. Let marinate for at least 30 minutes.
  • Heat a large skillet over medium-high heat. Add marinated chicken and cook until cooked through, about 5-7 minutes. Remove from skillet and set aside.
  • In the same skillet, add sliced bell peppers and onions. Sauté until tender and slightly charred, about 5 minutes.
  • Return the chicken to the skillet, mix well, and cook for an additional 2 minutes to combine flavors.
  • Serve hot with warm tortillas, and garnish with fresh cilantro. Add your favorite toppings, if desired.
