  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 3 large eggs
  • 1/4 cup lemon juice (freshly squeezed)
  • 1/2 cup white wine
  • 1/2 cup chicken broth
  • 1/4 cup butter
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Olive oil for frying

Instructions

  • Pound the chicken breasts to an even thickness, season with salt and pepper, and lightly coat them in flour.
  • Beat eggs in a shallow dish. Dip the floured chicken into the egg wash.
  • Heat olive oil in a large skillet over medium heat. Fry the chicken until golden brown on both sides, about 3-4 minutes per side. Remove and set aside.
  • In the same pan, add white wine, chicken broth, lemon juice, and butter. Simmer for 5 minutes until slightly reduced.
  • Return the chicken to the pan, spoon the sauce over it, and cook for another 2-3 minutes.
  • Garnish with parsley and serve hot.
