  • 8 oz penne or any pasta of choice
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 (14 oz) can crushed tomatoes
  • 1/2 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Season the cubed chicken with salt, pepper, and Italian seasoning, then cook until golden brown, about 5-6 minutes. Remove and set aside.
  3. In the same skillet, sauté garlic for 1 minute until fragrant.
  4. Add crushed tomatoes, chicken broth, and red pepper flakes (if using). Simmer for 5 minutes.
  5. Return the chicken to the skillet and stir to coat in the sauce.
  6. Stir in the cooked pasta, then top with mozzarella and Parmesan cheese. Stir until the cheese melts and becomes creamy.
  7. Garnish with fresh basil and serve hot.
