  • 1 lb chicken breast, diced
  • 4 cups chicken broth
  • 1 onion, chopped
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 2 garlic cloves, minced
  • 1 bay leaf
  • 1 tsp thyme
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1/2 cup egg noodles (optional)
  • Fresh parsley for garnish

Instructions

  • Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, and garlic. Sauté until vegetables are tender, about 5-7 minutes.
  • Add chicken, chicken broth, bay leaf, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • If using egg noodles, add them during the last 10 minutes of cooking. Cook until noodles are tender.
  • Remove bay leaf, adjust seasoning, and garnish with fresh parsley before serving.
