  • 6 chicken thighs
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped

Instructions

  • Season chicken thighs with salt and pepper.
  • Heat olive oil in a large skillet over medium heat. Add chicken thighs and cook until golden brown on both sides. Remove and set aside.
  • In the same skillet, melt butter and sauté garlic until fragrant.
  • Add mushrooms and cook until tender.
  • Pour in chicken broth and bring to a simmer, scraping the bottom of the skillet.
  • Stir in heavy cream and Parmesan cheese, cooking until the sauce thickens.
  • Return chicken thighs to the skillet, simmering for an additional 10 minutes.
  • Garnish with fresh parsley and serve hot.

  • For a lighter version, substitute half-and-half for heavy cream.
