  • 1 onion, diced

  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 cups beef broth
  • 2 cups elbow macaroni
  • 1 1/2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  • In a large pot, brown the ground beef over medium heat. Drain excess fat.
  • Add the diced onion and cook until softened, about 3-4 minutes.
  • Stir in garlic, chili powder, cumin, paprika, and cayenne pepper. Cook for 1 minute until fragrant.
  • Add the diced tomatoes, kidney beans, beef broth, and macaroni. Stir well and bring to a boil.
  • Reduce heat, cover, and simmer for 12-15 minutes until the pasta is tender.
  • Stir in shredded cheddar cheese until melted and fully combined.
  • Season with salt and pepper to taste.
  • Garnish with fresh parsley if desired, and serve hot.
