1 lb boneless, skinless chicken breast, cut into bite-sized pieces
3 tbsp peanut butter (creamy or chunky)
2 tbsp soy sauce
1 tbsp hoisin sauce
1 tbsp rice vinegar
2 cloves garlic, minced
1 tsp ginger, minced
1 tbsp honey
1 tbsp sesame oil
1/2 cup chicken broth
1 tbsp cornstarch (optional, for thickening)
2 tbsp green onions, chopped (for garnish)
Sesame seeds (optional, for garnish)
Instructions
Heat sesame oil in a large skillet or wok over medium-high heat.
Add chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
In the same pan, sauté garlic and ginger for 1 minute until fragrant.
Add peanut butter, soy sauce, hoisin sauce, rice vinegar, honey, and chicken broth. Stir well to combine.
Bring the sauce to a simmer. If desired, mix cornstarch with 2 tbsp of water, then add to the sauce to thicken.
Return the cooked chicken to the pan and toss to coat evenly in the sauce.
Cook for an additional 2-3 minutes, then remove from heat.
Garnish with green onions and sesame seeds. Serve hot over rice or noodles
Notes
Adjust the sweetness and saltiness of the sauce by tweaking the honey or soy sauce to your taste.
For a spicier version, add a dash of chili flakes or Sriracha sauce.
This dish pairs well with steamed broccoli or snap peas for added crunch.
