  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 cup chopped pecans (toasted)

For the frosting

  • ½ cup unsalted butter, softened
  • ⅓ cup cocoa powder
  • 3 cups powdered sugar
  • ⅓ cup whole milk
  • 1 tsp vanilla extract
  • ½ cup chopped pecans (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix flour, sugar, cocoa, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes. Stir in boiling water until combined (batter will be thin).
  4. Divide the batter between the pans and bake for 30-35 minutes, or until a toothpick comes out clean. Let the cakes cool in the pans for 10 minutes, then remove and cool completely.
  5. For the frosting, beat butter and cocoa until smooth. Gradually add powdered sugar and milk, beating to spreading consistency. Stir in vanilla.
