Ingredients
Scale
12 oz spaghetti (or pasta of choice)
4 slices of bacon (or pancetta), diced
3 large eggs
1 cup grated Parmesan cheese
1 tsp freshly ground black pepper
Salt (to taste)
1 tbsp olive oil (optional)
Instructions
Cook the spaghetti in salted boiling water until al dente. Reserve 1 cup of pasta water before draining.
In a large skillet, cook the bacon over medium heat until crispy. Remove from heat and set aside.
In a bowl, whisk together eggs, Parmesan cheese, and black pepper until smooth.
Add the hot pasta to the skillet with bacon. Stir to combine.
Gradually mix in the egg-cheese mixture while tossing, adding reserved pasta water a little at a time for creaminess.
Serve immediately, garnished with additional Parmesan and black pepper.
Notes
Use pancetta for a more authentic taste.
Work quickly when combining the hot pasta with the egg mixture to avoid scrambling.
Adjust consistency with reserved pasta water as needed.
