4 slices of thick white bread
4 tablespoons unsalted butter, softened
1 ½ cups shredded mozzarella cheese
1 ½ cups shredded cheddar cheese
1 tablespoon mayonnaise (optional, for extra crispiness)
Instructions
Butter one side of each slice of bread generously. If using, spread a thin layer of mayonnaise on the unbuttered side.
In a medium bowl, mix together the shredded mozzarella and cheddar cheeses.
Heat a nonstick skillet over medium heat.
Place one slice of bread, buttered side down, into the skillet. Add a generous portion of the cheese mixture on top and cover with the second slice of bread, buttered side up.
Cook until the bottom slice is golden brown, about 3-4 minutes. Carefully flip and cook the other side until golden brown and the cheese is fully melted, another 3-4 minutes.
Repeat with the remaining bread and cheese mixture.
Serve immediately while the sandwich is warm and gooey.
Notes
For extra crispy bread, use mayonnaise in addition to butter.
