  • 4 slices of thick white bread
  • 4 tablespoons unsalted butter, softened
  • 1 ½ cups shredded mozzarella cheese
  • 1 ½ cups shredded cheddar cheese
  • 1 tablespoon mayonnaise (optional, for extra crispiness)

Instructions

  1. Butter one side of each slice of bread generously. If using, spread a thin layer of mayonnaise on the unbuttered side.
  2. In a medium bowl, mix together the shredded mozzarella and cheddar cheeses.
  3. Heat a nonstick skillet over medium heat.
  4. Place one slice of bread, buttered side down, into the skillet. Add a generous portion of the cheese mixture on top and cover with the second slice of bread, buttered side up.
  5. Cook until the bottom slice is golden brown, about 3-4 minutes. Carefully flip and cook the other side until golden brown and the cheese is fully melted, another 3-4 minutes.
  6. Repeat with the remaining bread and cheese mixture.
  7. Serve immediately while the sandwich is warm and gooey.
