This Creamy Chicken Pesto Pasta recipe combines tender chicken, silky pesto sauce, and perfectly cooked pasta for an irresistible dish.

Ingredients

  • 300g pasta (penne or fettuccine)
  • 2 tbsp olive oil
  • 2 chicken breasts, diced
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup basil pesto
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  • Cook the pasta according to package instructions until al dente. Drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Add the diced chicken and cook until golden and fully cooked, about 6–8 minutes. Remove from the skillet and set aside.
  • In the same skillet, add minced garlic and sauté for 1–2 minutes until fragrant.
  • Stir in the heavy cream and basil pesto, mixing until well combined. Let it simmer for 3–4 minutes.
  • Add the cooked chicken back into the skillet, then stir in the Parmesan cheese. Cook for another 2 minutes.
  • Toss the cooked pasta into the skillet and mix until the pasta is fully coated in the creamy pesto sauce. Season with salt and pepper to taste.
  • Garnish with fresh basil leaves and serve immediately.

Notes

  • For a richer flavor, add a tablespoon of butter to the sauce.
  • Adjust the amount of pesto and Parmesan to taste.
  • Use whole-wheat or gluten-free pasta if preferred.
