300g pasta (penne or fettuccine)
2 tbsp olive oil
2 chicken breasts, diced
3 garlic cloves, minced
1 cup heavy cream
1/2 cup basil pesto
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh basil leaves for garnish
Instructions
Cook the pasta according to package instructions until al dente. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Add the diced chicken and cook until golden and fully cooked, about 6–8 minutes. Remove from the skillet and set aside.
In the same skillet, add minced garlic and sauté for 1–2 minutes until fragrant.
Stir in the heavy cream and basil pesto, mixing until well combined. Let it simmer for 3–4 minutes.
Add the cooked chicken back into the skillet, then stir in the Parmesan cheese. Cook for another 2 minutes.
Toss the cooked pasta into the skillet and mix until the pasta is fully coated in the creamy pesto sauce. Season with salt and pepper to taste.
Garnish with fresh basil leaves and serve immediately.
Notes
For a richer flavor, add a tablespoon of butter to the sauce.
Adjust the amount of pesto and Parmesan to taste.
Use whole-wheat or gluten-free pasta if preferred.
