1 lb Italian sausage (mild or spicy)
1 tbsp olive oil
3 cloves garlic, minced
1 small onion, diced
1 cup chicken broth
1 cup heavy cream
1 can (14 oz) diced tomatoes
1 tsp Italian seasoning
½ tsp red pepper flakes (optional)
½ cup grated Parmesan cheese

Instructions
Cook ditalini pasta according to package instructions. Reserve ½ cup pasta water and drain the rest.
In a large skillet, heat olive oil over medium heat. Add sausage and cook until browned, breaking it into small pieces.

Stir in chicken broth, diced tomatoes, heavy cream, Italian seasoning, and red pepper flakes. Simmer for 5-7 minutes until sauce thickens.
Mix in Parmesan cheese, cooked pasta, and reserved pasta water if needed to adjust the sauce's consistency.
