  • 1 lb ground beef
  • 4 medium potatoes, peeled and diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • Optional toppings: chopped parsley, bacon bits

Instructions

  • In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned. Remove and set aside.
  • In the same pot, sauté onions and garlic until fragrant, about 2-3 minutes.
  • Add diced potatoes and chicken broth. Bring to a boil, then reduce to a simmer and cook until potatoes are tender, about 15-20 minutes.
  • Return the cooked ground beef to the pot. Stir in heavy cream and shredded cheddar cheese.
  • Season with smoked paprika, salt, and pepper. Simmer for 5 more minutes until the soup thickens.
  • Serve hot, garnished with parsley or bacon bits if desired.

Notes

  • For a thicker soup, mash some of the cooked potatoes before adding the cream.
  • Substitute ground turkey or chicken for a lighter option.
  • Leftovers can be refrigerated for up to 3 days and reheated on the stovetop.
