  • 12 oz rigatoni pasta
  • 2 tbsp olive oil
  • 1 lb beef or chicken sausage (casings removed)
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1 cup crushed tomatoes
  • 1/2 cup grated Parmesan cheese (plus extra for garnish)
  • 1 tsp dried oregano
  • 1/2 tsp chili flakes (optional)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook rigatoni according to package instructions until al dente. Drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Add the sausage and cook until browned, breaking it into smaller pieces.
  • Add the chopped onion and cook until softened, about 3-4 minutes. Stir in the garlic and cook for another minute.
  • Reduce the heat to low. Pour in the heavy cream and crushed tomatoes. Stir well to combine.
  • Add Parmesan cheese, dried oregano, chili flakes (if using), salt, and pepper. Let the sauce simmer for 5-7 minutes until it thickens.
  • Toss the cooked rigatoni in the sauce until well-coated.
  • Serve hot, garnished with fresh parsley and extra Parmesan cheese, if desired.
