  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 cups shredded white cheddar cheese
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 tsp crushed red pepper flakes (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  • Cook pasta in a large pot of salted boiling water until al dente. Drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Add the chicken pieces, season with salt, black pepper, and paprika, and cook until golden and cooked through, about 5-7 minutes. Remove chicken and set aside.
  • In the same skillet, add minced garlic and sauté until fragrant, about 1 minute. Pour in the heavy cream and chicken broth, stirring to combine.
  • Bring the mixture to a gentle simmer and cook for 5-6 minutes until slightly thickened. Add shredded white cheddar cheese, stirring until the cheese is fully melted and the sauce is smooth.
  • Return the cooked chicken to the skillet and stir to coat in the sauce. Add cooked pasta and toss well to combine.
  • Taste and adjust seasoning, adding more salt or black pepper as needed. If desired, sprinkle in crushed red pepper flakes for some heat.
  • Garnish with fresh chopped parsley and serve hot.
