  • 2 boneless, skinless chicken breasts
  • 2 cups heavy cream
  • 1 ½ cups chicken broth
  • 1 tablespoon Cajun seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 8 oz penne pasta
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon butter
  • 1 tablespoon cornstarch (optional, for thickening)
  • 1 cup diced bell peppers (red and green)
  • ½ cup diced onions
  • 3 cloves garlic, minced

Instructions

  • Place chicken breasts in the crock pot.
  • Add heavy cream, chicken broth, Cajun seasoning, garlic powder, onion powder, paprika, salt, and black pepper. Stir to combine.
  • Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours, until chicken is tender.
  • Remove chicken, shred, and return to the crock pot.
  • Stir in uncooked penne pasta, Parmesan cheese, mozzarella cheese, butter, bell peppers, onions, and garlic.
  • Cover and cook on HIGH for an additional 30-40 minutes, stirring occasionally, until pasta is tender.
  • If sauce is too thin, mix cornstarch with a little water and stir into the sauce to thicken.
  • Serve hot and enjoy!

Notes

  • Adjust Cajun seasoning to taste for more or less spice.
  • Use pre-cooked pasta for a quicker meal; add it in the last 10 minutes.
  • Add cooked sausage or shrimp for extra protein.
