2 boneless, skinless chicken breasts
2 cups heavy cream
1 ½ cups chicken broth
1 tablespoon Cajun seasoning
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon paprika
½ teaspoon salt
¼ teaspoon black pepper
8 oz penne pasta
1 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
1 tablespoon butter
1 tablespoon cornstarch (optional, for thickening)
1 cup diced bell peppers (red and green)
½ cup diced onions
3 cloves garlic, minced
Instructions
Place chicken breasts in the crock pot.
Add heavy cream, chicken broth, Cajun seasoning, garlic powder, onion powder, paprika, salt, and black pepper. Stir to combine.
Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours, until chicken is tender.
Remove chicken, shred, and return to the crock pot.
Stir in uncooked penne pasta, Parmesan cheese, mozzarella cheese, butter, bell peppers, onions, and garlic.
Cover and cook on HIGH for an additional 30-40 minutes, stirring occasionally, until pasta is tender.
If sauce is too thin, mix cornstarch with a little water and stir into the sauce to thicken.
Serve hot and enjoy!
Notes
Adjust Cajun seasoning to taste for more or less spice.
Use pre-cooked pasta for a quicker meal; add it in the last 10 minutes.
