1 lb boneless, skinless chicken breasts
3 cups chicken broth
1 can (14.5 oz) diced tomatoes
1 can (8 oz) tomato sauce
1/2 cup heavy cream
1 cup shredded Parmesan cheese
1 cup shredded mozzarella cheese
1/2 cup diced onion
2 cloves garlic, minced
1 tsp Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp red pepper flakes (optional)
1 cup cooked pasta (such as rotini or penne)
2 tbsp fresh basil, chopped (for garnish)
Instructions
Place chicken breasts, chicken broth, diced tomatoes, tomato sauce, onion, garlic, Italian seasoning, salt, pepper, and red pepper flakes in the Crock Pot.
Cover and cook on low for 6-7 hours or high for 3-4 hours, until chicken is tender.
Remove the chicken, shred it with two forks, and return it to the slow cooker.
Stir in heavy cream, Parmesan cheese, and mozzarella cheese until melted and well combined.
Add cooked pasta and mix well.
Let cook for an additional 10-15 minutes until heated through.
Serve hot, garnished with fresh basil.
Notes
For a thicker soup, use less broth or add more cheese.
You can substitute half-and-half for heavy cream for a lighter version.
