  • 1 lb boneless, skinless chicken breasts
  • 3 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1/2 cup heavy cream
  • 1 cup shredded Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp red pepper flakes (optional)
  • 1 cup cooked pasta (such as rotini or penne)
  • 2 tbsp fresh basil, chopped (for garnish)

Instructions

  • Place chicken breasts, chicken broth, diced tomatoes, tomato sauce, onion, garlic, Italian seasoning, salt, pepper, and red pepper flakes in the Crock Pot.
  • Cover and cook on low for 6-7 hours or high for 3-4 hours, until chicken is tender.
  • Remove the chicken, shred it with two forks, and return it to the slow cooker.
  • Stir in heavy cream, Parmesan cheese, and mozzarella cheese until melted and well combined.
  • Add cooked pasta and mix well.
  • Let cook for an additional 10-15 minutes until heated through.
  • Serve hot, garnished with fresh basil.
