Warm up with this comforting crockpot tortellini soup with sausage. This easy recipe features tender tortellini, savory sausage, and a creamy broth, making it a perfect one-pot meal for busy days.

  • 1 lb Italian sausage
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 2 cups crushed tomatoes
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup heavy cream
  • 4 cups fresh cheese tortellini
  • 2 cups fresh spinach
  • Salt and pepper, to taste

Instructions

  • In a skillet, cook the Italian sausage until browned. Drain excess fat.
  • Transfer the cooked sausage to a crockpot. Add diced onion, garlic, chicken broth, crushed tomatoes, Italian seasoning, and red pepper flakes. Stir well.
  • Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  • Stir in the heavy cream and tortellini during the last 30 minutes of cooking.
  • Add spinach in the final 10 minutes and stir until wilted.
  • Adjust salt and pepper to taste, then serve warm.

Notes

  • For extra flavor, use hot Italian sausage or add more red pepper flakes.
  • Substitute heavy cream with half-and-half for a lighter version.
