1 lb Italian sausage
1 small onion, diced
3 garlic cloves, minced
4 cups chicken broth
2 cups crushed tomatoes
1 tsp Italian seasoning
1/4 tsp red pepper flakes (optional)
1/2 cup heavy cream
4 cups fresh cheese tortellini
2 cups fresh spinach
Salt and pepper, to taste
Instructions
In a skillet, cook the Italian sausage until browned. Drain excess fat.
Transfer the cooked sausage to a crockpot. Add diced onion, garlic, chicken broth, crushed tomatoes, Italian seasoning, and red pepper flakes. Stir well.
Cover and cook on low for 6-7 hours or on high for 3-4 hours.
Stir in the heavy cream and tortellini during the last 30 minutes of cooking.
Add spinach in the final 10 minutes and stir until wilted.
Adjust salt and pepper to taste, then serve warm.
Notes
For extra flavor, use hot Italian sausage or add more red pepper flakes.
Substitute heavy cream with half-and-half for a lighter version.
