This delicious Bruschetta Chicken Pasta recipe combines tender grilled chicken, perfectly cooked pasta, and fresh tomato bruschetta for a hearty and flavorful meal that's easy to prepare. Perfect for weeknight dinners or entertaining!

  • 2 large boneless, skinless chicken breasts
  • 8 oz (2 cups) penne or spaghetti pasta
  • 2 cups cherry tomatoes, diced
  • 2 garlic cloves, minced
  • 1/4 cup fresh basil, chopped
  • 2 tbsp olive oil
  • 1/4 cup balsamic vinegar
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  • Cook the pasta according to package instructions. Drain and set aside.
  • Season chicken breasts with salt and pepper. Heat 1 tbsp olive oil in a skillet over medium heat and grill the chicken for 6-7 minutes on each side, or until fully cooked. Remove and slice.
  • In a bowl, mix cherry tomatoes, garlic, basil, 1 tbsp olive oil, and balsamic vinegar. Toss well to combine.
  • In the skillet, combine cooked pasta, sliced chicken, and the bruschetta mixture. Toss until heated through.
  • Garnish with Parmesan cheese and serve warm.
