5 large russet potatoes, diced
1½ cups sour cream
2 cups shredded cheddar cheese
1 cup cooked bacon, crumbled
½ cup chopped green onions
½ teaspoon garlic powder
Salt and pepper to taste
2 tablespoons butter, melted
Preheat oven to 375°F (190°C).
In a large bowl, mix sour cream, cheddar cheese, bacon, green onions, garlic powder, salt, and pepper.
Add diced potatoes and stir to coat evenly.
Transfer mixture to a greased baking dish and drizzle with melted butter.
Cover with foil and bake for 45 minutes.
Uncover and bake an additional 20-25 minutes until golden and bubbly.
