  • 2 cups cooked shredded chicken
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 (10 oz) can enchilada sauce
  • 8 flour tortillas
  • 1/4 cup diced onions (optional)
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  • Preheat oven to 375ยฐF (190ยฐC).
  • In a bowl, combine shredded chicken, 1/2 cup enchilada sauce, and 1/2 cup cheese. Mix well.
  • Spoon the chicken mixture into each tortilla, roll tightly, and place seam-side down in a baking dish.
  • Pour remaining enchilada sauce over the tortillas, spreading evenly.
  • Sprinkle remaining cheese on top.
  • Bake for 20 minutes or until the cheese is melted and bubbly.
