2 lbs ground beef
1 small onion, finely diced
1 small green bell pepper, finely diced
1 cup crushed Ritz crackers
2 large eggs, beaten
1/2 cup milk
1/2 cup ketchup (plus extra for topping)
2 tsp salt
1/4 tsp black pepper
1/4 tsp garlic powder
1/4 cup brown sugar (for glaze)
Instructions
Preheat oven to 350ยฐF (175ยฐC).
In a large mixing bowl, combine ground beef, onion, bell pepper, Ritz crackers, eggs, milk, ketchup, salt, pepper, and garlic powder. Mix until just combined.
Transfer the mixture to a loaf pan and shape into a loaf.
In a small bowl, mix additional ketchup and brown sugar for the glaze. Spread evenly over the meatloaf.
Bake for 60-75 minutes or until the internal temperature reaches 160ยฐF (71ยฐC).
Let rest for 10 minutes before slicing and serving.
