  • 1 can black beans (drained)
  • 1 cup corn (frozen or canned)
  • 1 packet taco seasoning
  • 1 jar salsa
  • 2 cups shredded cheddar cheese
  • 8 corn tortillas
  • 1 cup sour cream
  • Chopped cilantro (optional)

Instructions

  • Preheat oven to 350°F (175°C).
  • Cook ground beef in a skillet, add taco seasoning and salsa.
  • Layer corn tortillas at the bottom of a greased casserole dish.
  • Add beef mixture, black beans, and corn on top of the tortillas.
