  • 6 medium potatoes, peeled and diced

  • 4 large eggs

  • 1 cup mayonnaise

  • 2 tablespoons yellow mustard

  • 1/2 cup diced celery

  • 1/4 cup diced red onion

  • 2 tablespoons sweet pickle relish

  • Salt and pepper, to taste

  • Paprika, for garnish

Instructions

  1. Boil the diced potatoes in salted water until tender, about 10–12 minutes. Drain and let cool.

  2. Meanwhile, place eggs in a saucepan, cover with water, and bring to a boil. Once boiling, turn off heat, cover, and let sit for 10–12 minutes. Peel and chop.

  3. In a large bowl, combine cooled potatoes, chopped eggs, celery, onion, and relish.

  4. In a separate bowl, mix mayonnaise and mustard until smooth. Pour over potato mixture and gently toss to coat.

  5. Season with salt and pepper to taste.

  6. Chill for at least 1 hour before serving. Garnish with paprika if desired.

Notes

  • For extra flavor, add a splash of pickle juice to the dressing.

  • Red potatoes or Yukon Gold potatoes work best for a creamy texture.
