  • 3 pounds Yukon Gold potatoes, peeled and cubed

  • 1 cup mayonnaise

  • 2 tablespoons yellow mustard

  • 4 hard-boiled eggs, chopped

  • 1/2 cup sweet pickle relish

  • 1/2 cup finely diced celery

  • 1/4 cup finely diced red onion

  • Salt and pepper to taste

  • Paprika for garnish

Instructions

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 10-15 minutes. Drain and cool slightly.

  • In a large bowl, mix mayonnaise, mustard, relish, celery, and red onion.

  • Add potatoes and chopped eggs to the bowl and gently fold to combine.

  • Season with salt and pepper to taste.
