    • ½ cup sour cream
    • ¼ cup mayonnaise
    • 1 tbsp lime juice
    • 1 small jalapeño, finely chopped
    • 1 tbsp chopped cilantro
    • ½ tsp garlic powder
    • ½ tsp onion powder
    • Salt and pepper, to taste
  • For Assembly:
    • 6 small flour or corn tortillas
    • 4 slices cooked bacon, crumbled
    • Extra chopped cilantro, for garnish
    • Lime wedges, for serving

Instructions

  • Prepare the Fried Chicken:
    • In a bowl, marinate chicken strips in buttermilk for at least 30 minutes.
    • In a separate bowl, mix flour, cornstarch, garlic powder, onion powder, paprika, salt, and pepper.
    • Heat oil in a deep skillet to 350°F (175°C).
    • Dredge chicken in the flour mixture, then fry until golden brown and cooked through (about 5-7 minutes). Drain on paper towels.
  • Make the Street Corn Topping:
    • In a bowl, combine corn, mayonnaise, cheese, lime juice, chili powder, and cilantro. Stir well.
