This Ground Beef Enchiladas recipe is loaded with seasoned ground beef, melty cheese, and zesty enchilada sauce, creating the ultimate family favorite Mexican-inspired dish!

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup diced onions
  • 2 cups shredded cheddar cheese
  • 1 can (15 oz) red enchilada sauce
  • 8 small flour or corn tortillas
  • 1 tbsp olive oil
  • Optional toppings: sour cream, chopped cilantro, sliced jalapeños

Instructions

  • Preheat oven to 375°F (190°C).
  • In a skillet, heat olive oil over medium heat. Add diced onions and cook until softened.
  • Add ground beef to the skillet and cook until browned. Stir in taco seasoning and mix well.
  • Spread 1/4 cup of enchilada sauce on the bottom of a baking dish.
  • Fill each tortilla with a portion of the beef mixture and shredded cheese, then roll tightly.
  • Place the rolled tortillas seam-side down in the baking dish.
  • Pour the remaining enchilada sauce over the tortillas and top with the remaining cheese.
  • Bake for 20 minutes, or until cheese is melted and bubbly.
  • Garnish with optional toppings before serving.
