  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup Bisquick mix
  • 1 cup milk
  • 2 eggs
  • 1/2 cup chopped onion
  • 1/2 cup diced tomatoes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Preheat oven to 400°F (200°C). Grease a 9-inch pie dish.
  • In a skillet, cook ground beef and onion over medium heat until browned. Drain excess grease.
  • Stir in taco seasoning and diced tomatoes. Simmer for 2 minutes.
  • Spread the beef mixture evenly into the greased pie dish.
  • Sprinkle shredded cheese over the beef mixture.
  • In a bowl, whisk Bisquick mix, milk, and eggs until smooth. Pour over the beef and cheese.
  • Bake for 25-30 minutes or until the top is golden brown and a toothpick comes out clean.
