  • 1 large ciabatta or baguette, sliced in half
  • 1 cup chopped romaine lettuce
  • ½ cup cherry tomatoes, diced
  • ½ cup cucumber, diced
  • ¼ cup red onion, thinly sliced
  • ½ cup black olives, sliced
  • ½ cup mozzarella, diced (or shredded)
  • ¼ cup banana peppers, sliced
  • 2 tablespoons mayonnaise
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon dried oregano
  • Salt and pepper, to taste

Instructions

  • In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, dried oregano, salt, and pepper to make the dressing.
  • In a large bowl, combine chopped romaine lettuce, cherry tomatoes, cucumber, red onion, black olives, banana peppers, and mozzarella. Toss with the prepared dressing.
  • Spread mayonnaise evenly over the inside of both bread halves.
  • Layer the salad mixture generously onto the bottom half of the bread.
  • Place the top half of the bread over the filling, gently pressing down to hold everything in place.
  • Slice the sandwich into desired portions and serve immediately.
