1 large ciabatta or baguette, sliced in half
1 cup chopped romaine lettuce
½ cup cherry tomatoes, diced
½ cup cucumber, diced
¼ cup red onion, thinly sliced
½ cup black olives, sliced
½ cup mozzarella, diced (or shredded)
¼ cup banana peppers, sliced
2 tablespoons mayonnaise
2 tablespoons olive oil
1 tablespoon red wine vinegar
1 teaspoon Dijon mustard
½ teaspoon dried oregano
Salt and pepper, to taste
Instructions
In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, dried oregano, salt, and pepper to make the dressing.
In a large bowl, combine chopped romaine lettuce, cherry tomatoes, cucumber, red onion, black olives, banana peppers, and mozzarella. Toss with the prepared dressing.
Spread mayonnaise evenly over the inside of both bread halves.
Layer the salad mixture generously onto the bottom half of the bread.
Place the top half of the bread over the filling, gently pressing down to hold everything in place.
Slice the sandwich into desired portions and serve immediately.
Notes
