Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined.
  3. Press the mixture into the bottom and up the sides of a 9-inch pie dish.
  4. Bake the crust for 10 minutes, then let it cool.
  5. In another bowl, whisk together sweetened condensed milk, key lime juice, and egg yolks until smooth.
  6. Pour the filling into the cooled crust.
  7. Bake the pie for 15-20 minutes or until the filling is set but still slightly jiggly in the center.
  8. Let the pie cool completely, then refrigerate for at least 2 hours before serving.
  9. Top with whipped cream before serving, if desired.
