  • 1 ½ pounds lamb shoulder or leg, cut into 1-inch cubes

  • 3 tablespoons olive oil

  • 2 tablespoons lemon juice

  • 3 garlic cloves, minced

  • 1 tablespoon fresh oregano, chopped (or 1 teaspoon dried)

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon paprika

  • Wooden skewers (soaked in water for 30 minutes)

Instructions

  1. In a bowl, combine olive oil, lemon juice, garlic, oregano, salt, pepper, and paprika.

  2. Add the lamb cubes to the marinade, coating well. Cover and refrigerate for at least 2 hours, preferably overnight.

  3. Preheat grill to medium-high heat.

  4. Thread lamb onto skewers, leaving small gaps between pieces.

  5. Grill skewers for 8–10 minutes, turning occasionally, until lamb is charred outside and medium inside.
