Ingredients

Scale

  • 1 lb dried red beans, rinsed and soaked overnight
  • 1 lb smoked sausage, sliced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups water or chicken broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cayenne pepper
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 2 bay leaves
  • 1 tsp Creole seasoning
  • 1 tbsp olive oil
  • 1 tsp Worcestershire sauce
  • 1 tsp hot sauce (optional)
  • 3 cups cooked white rice
  • 2 green onions, chopped (for garnish)

Instructions

  • Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove and set aside.
  • In the same pot, sauté onion, bell pepper, and celery until softened. Add garlic and cook for another minute.
  • Stir in red beans, water or broth, salt, black pepper, cayenne, paprika, thyme, bay leaves, Creole seasoning, Worcestershire sauce, and hot sauce.
  • Bring to a boil, then reduce heat to low. Cover and simmer for 2–3 hours, stirring occasionally, until beans are tender.
  • Mash some beans against the pot’s side to create a creamy texture.
  • Return sausage to the pot and cook for another 15 minutes. Adjust seasoning if needed.
  • Remove bay leaves and serve hot over cooked white rice. Garnish with green onions.

Notes

  • Soaking the beans overnight helps them cook faster.
  • Adjust spice levels to your preference.
  • Use Andouille sausage for an authentic smoky flavor.
  • Leftovers taste even better the next day!
