Ingredients

Scale
  • Crust:
    • 1 cup graham cracker crumbs
    • 2 tbsp sugar
    • 4 tbsp melted butter
  • Cheesecake Filling:
    • 16 oz cream cheese, softened
    • ½ cup granulated sugar
    • 2 large eggs
    • 1 tsp vanilla extract

Instructions

  • Prepare the Crust: Preheat the oven to 325°F (165°C). Line a muffin pan with paper liners. Mix graham cracker crumbs, sugar, and melted butter until combined, then press about 1 tbsp into each liner.
  • Make the Filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, blending well. Mix in vanilla.
  • Bake: Spoon the filling over each crust, filling the cups about 3/4 full. Bake for 15-18 minutes or until centers are set.
  • Cool and Chill: Allow cheesecakes to cool, then chill in the fridge for at least 2 hours before serving.

Notes

  • Use full-fat cream cheese for the creamiest texture.
  • Add toppings like fresh berries, chocolate drizzle, or whipped cream before serving for extra flavor.
