Mixed Up Lasagna is a delicious, deconstructed twist on classic lasagna. This easy-to-make casserole combines ground beef, marinara sauce, ricotta, mozzarella, and pasta, giving you the rich, comforting flavors of lasagna in a less time-consuming and simpler format. Perfect for busy weeknight dinners or family gatherings.

  • 1 lb ground beef
  • 12 oz pasta (penne, rotini, or rigatoni)
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  2. Cook the pasta according to package instructions, drain, and set aside.
  3. In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until softened.
  4. Add ground beef to the skillet and cook until browned. Drain any excess fat.
  5. Stir in marinara sauce, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  6. In a large bowl, combine the cooked pasta, ricotta cheese, and half of the mozzarella. Stir in the beef mixture until well combined.
  7. Spread the mixture evenly into the prepared baking dish and top with the remaining mozzarella and Parmesan cheese.
  8. Bake for 20-25 minutes, until the cheese is melted and bubbly. Garnish with fresh basil or parsley if desired before serving.
