This mozzarella stuffed meatloaf recipe features a tender, seasoned meat mixture filled with gooey, melted mozzarella cheese. It's a wholesome and flavorful dish, perfect for weeknight dinners or special occasions.

  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup finely chopped onion
  • 3 garlic cloves, minced
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp dried Italian seasoning
  • 8 oz fresh mozzarella cheese, cut into a log or slices
  • 1/2 cup ketchup (optional for topping)
  • 1 tbsp brown sugar (optional for topping)

Instructions

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  • In a large mixing bowl, combine ground beef, breadcrumbs, eggs, Parmesan cheese, onion, garlic, parsley, milk, salt, black pepper, smoked paprika, and Italian seasoning. Mix well until evenly combined.
  • On a piece of parchment paper, flatten the meat mixture into a rectangle about 1/2 inch thick.
  • Lay the mozzarella cheese in the center of the meat rectangle, leaving some space at the edges.
  • Carefully roll the meat mixture over the cheese, forming a loaf. Seal the edges tightly to prevent the cheese from oozing out during baking.
  • Transfer the meatloaf onto the prepared baking sheet, seam side down.
  • If desired, mix ketchup and brown sugar in a small bowl and spread it over the top of the meatloaf for a glaze.
  • Bake in the preheated oven for 50-60 minutes, or until the internal temperature reaches 160°F (70°C).
  • Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

  • For extra flavor, you can add a pinch of red pepper flakes to the meat mixture.
  • Ensure the mozzarella is tightly sealed within the meatloaf to prevent leakage.
  • Serve with mashed potatoes, roasted vegetables, or a fresh salad for a complete meal.
