2 ¾ cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup unsalted butter, softened
1 ¾ cups sugar
4 large egg whites
1 tablespoon vanilla extract
1 cup whole milk
½ cup sour cream
Instructions
Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.
In a bowl, whisk flour, baking powder, baking soda, and salt.
In a large bowl, beat butter and sugar until light and fluffy. Add egg whites one at a time, then vanilla extract.
Alternate adding dry ingredients with milk and sour cream, beginning and ending with the dry ingredients.
Divide the batter between the pans and smooth the tops.
Bake for 25-30 minutes until a toothpick comes out clean. Cool in pans for 10 minutes, then transfer to wire racks.
Frost and assemble as desired.
Notes
For a richer flavor, substitute some of the milk with buttermilk.
Ensure egg whites are at room temperature for better volume.
