4 boneless, skinless chicken breasts
1 cup long-grain white rice
2 cups chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 tablespoons olive oil
1 small onion, diced
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon paprika
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Season chicken breasts with salt, pepper, paprika, and thyme.
Heat olive oil in a large skillet over medium heat. Sear chicken on both sides until golden brown. Remove and set aside.
In the same pan, sauté onion and garlic until fragrant.
Add rice, chicken broth, and heavy cream. Stir to combine.
Return chicken to the pan, nestling it into the rice mixture.
