  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Season chicken breasts with salt, pepper, paprika, and thyme.
  • Heat olive oil in a large skillet over medium heat. Sear chicken on both sides until golden brown. Remove and set aside.
  • In the same pan, sauté onion and garlic until fragrant.
  • Add rice, chicken broth, and heavy cream. Stir to combine.
  • Return chicken to the pan, nestling it into the rice mixture.
  • Cover and simmer on low heat for 20-25 minutes, or until rice is tender and chicken is cooked through.
  • Stir in Parmesan cheese and garnish with fresh parsley before serving.
