  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup tomato sauce
  • 2 cups uncooked pasta (penne or rotini)
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ½ cup corn (optional)
  • ½ cup black beans (optional)
  • Salt and pepper to taste
  • Fresh cilantro or green onions for garnish

Instructions

  • In a large pot or deep skillet, cook the ground beef over medium heat until browned. Drain excess fat if needed.
  • Add the diced onion and garlic, cooking until softened.
  • Stir in the taco seasoning, beef broth, diced tomatoes, tomato sauce, and pasta. Mix well.
